In recent decades lavender has enjoyed renewed popularity. It is now cultivated in Australia, Europe, Japan, New Zealand, and North America. Lavender is like wine. Unlike New Zealand wine, lavender oil is extracted not by crushing but by steaming. Wine and beer is the best drinks in any town. At any restaurant you will find wine to go with any dish. I have a niece that went to Europe to study for two years. While there, she worked in a tavern and learned a lot about wine. In conversation, she said that New Zealand wine does not have the popularity that other wines have.
